I had some leftover pasta since I made the whole box. I kept trying to think of what I could with it besides serve it with red tomato-based sauce. I felt like a cold pasta salad and this is what I came up with.
Peparella Pasta
10 oz. penne pasta (I use Ronzoni Smart Taste)
8 slices Hormel Turkey pepperoni, chopped
2 oz. mozarella cheese, small cubed
1/4 cup chopped onion
2/3 cup chopped green bell pepper
2 Tbls. light italian dressing (I used Wishbone Light Italian)
Simply mix all ingredients.
Turned out pretty good! Not the best salad I've ever had. But I'm new to this creating thing and it's made with ingredients I already had on hand. Any other suggestions to make this salad better without increasing calories too much? 
We had Chicken fingers last night. I put mine in honey dijon mustard and roll them in crushed up corn flakes. They are very yummy and good for you. It's from the best life diet.
ReplyDeleteAlso...here is a yummy pasta recipe...from Losing It. I don't make it anymore because Steven was sick and threw it up once...now the smell makes him sick...I miss it. :(
Prpare 1 lb os a pasta of your choice (I use whole wheat Pene)
Combine the following on a cookie sheet:
12 grape tomatoes
1/3 c. Olive Oil
1/2c. minced fresh basil or 1 T dreid
1/4 c. minced fresh oregano or 1 t. dreid
2T minced thyme or 2 t. dreid
1-2 tsp salt
1 t. pepper
1t. minced garlic
1 t. red pepper flakes
1/4 grated Parmesan Cheese
Broil 5-7 minutes and serve over pasta
I've used the same thing (minus the tomatoes) on chicken. It's yummy! It is 335 calories per 1 c. serving...kind of a lot but it is yummy and good for you!
